My name is PJ. I’m 26. I’m going to open a brewery. I love talking about beer, among other things. While I might not always take advice, I’ll always listen, so please share your thoughts, ideas, and dreams. Who knows what connections we might have.
Kell is also writing for this here blog. He is the other main person involved in starting this beast of a brewery. He’s 26 too. Ask him stuff.

PJ or Kell, what doy ou guys recommend for education in regards to brewing? I’m more than interested, and would like to get your take on education in regards to necessity for brewing…or something like that.

How did you get started as far as permits/licenses are concerned?
And what kind of set-up are you using?

thanks for reading! That’s awesome you’re following a similar path.
As far as advice… Make sure you’re always learning. There is a lot that goes into it beyond just making good beer. And making good beer is really really important. Obviously, I’m not open yet.. but, there is so much to learn.
Brewing itself has many facets to learn about.. Grain, yeast, hops, water, temperature, storage, etc. Then there’s the equipment.. Transferring from a kettle to a carboy is one thing. Transferring from a kettle to a 5 bbl conical fermenting vessel is another. Then there’s legal, finance, the ttb, etc. So, my advice is to never stop learning.
As far as permits.. I don’t have them yet. We’re still in the planning stages.
Right now I’m just brewing at home, but we’re looking at a 5 bbl system.

Just wanted to say I really dig the blog, your passion and entrepreneurial spirit is admirable and has further encouraged me to think about the possibility of opening a brewpub. Right now it’s just an idea but seeing someone else out there not afraid to take the risks and following their dreams excites me thoroughly and I can’t help but fantasize doing the same. More than simply respect here man…and more than just admiration…
I’ve beer a beer fanatic for as long as I can remember and yes before the age of 21 ;). Not simply beer, but real beer. So you can understand of course and see that yes I respect your passion, love the passion and love the fact that you’re chasing what you to do most, despite the “hard times”.
But more so than that, there is a sense of appreciation, and a sense of gratitude. I seriously thank you for that on behalf of all us craft beer loving motherf****rs…it’s just my opinion and take on it all but I’m sure that everyone will agree.
Because you’re only adding to and helping build the craft beer culture and hopefully one day we can sway more and more people to leave that crap they call “beer” (aka bud light etc). You’ve taken the risk, putting in al the hard work, dedication and passion to make all of this work. You run a blog, are personable and do things such as…oh you know…respond to other peoples comments ;).
So for all this I thank you. Because it’s more than just beer itself. It’s the art, passion, work, the care and admiration for the people behind it all. Which in my very strong opinion is one reason behind why the craft beer culture is the way it is today….it’s the people more than just the beer 🙂
I’m in Colorado often, and I will HAVE to stop by and meet ya and try some of your brews. In fact I’ll actually be in town for sure this November for the beer bloggers conference in Colorado…

I’m on the same vague basic track myself, though less of an urge to brew for a paycheck than you folks. Up here in the great white north of NY (really close to VT, btw) I’m making some fairly experimental brews. I don’t get out to Denver, well, ever. I am in San Diego and working on a new startup that will cater to home brewers (novice – expert). I am seeking some inside knowledge on this fun micro brew industry and was wondering if I could hit you up with some questions.
I too am a web developer / consultant and have a few side businesses. I am teaming up with a few buddies to open a unique (especially to Sothern California) business targeting this market. We are not aiming to be a brewery right off the bat, that would be well down the road, however, we will provide a unique service that will be a huge hit here in San Diego. Let me know if you would have some time this weekend to answer a few questions I have. Also, I have great connections with the owners of Stone Brewey and Firehouse Brewery. I may be able to return the favor and get you in one of those companies to shadow.
